The South Africa culture is one of Sourdough International's collection of more than 16 authentic sourdough cultures from around the world. This culture was sent to Ed by Gray Handcock from Kenilworth, a suburb of Cape Town. He told Ed he uses only pure whole wheat, no unbleached white flour. It is our only whole wheat sourdough culture. It will produce a 100% whole wheat loaf that is very firm. Ed prefers to mix it with 25% white flour. However, your choice. Refrigerated sourdough cultures become dormant but stay viable for many months requiring feeding only to reactivate them before use. The included instructions describe in detail how to activate, reactivate and use our cultures. Ed Wood's most recent book "Classic Sourdoughs, Revised" contains detailed information for using, maintaining and being successful with sourdough cultures. It also contains a wide range of recipes for our sourdough cultures [except the most recent Polish]. None of our cultures ever use commercial yeast in any form. 100% organic sprouted wheat that is flour free, yeast free, dairy free and free of preservatives and anything other than our three basic ingredients: sprouted organic wheat, 1% sea salt, filtered water. We soak and sprout the grain to begin the transformation of grain to vegetable (wheat grass). We wet grind the sprouted wheat into a mash to which we add our sprouted mash starter (a rich ferment of wild yeast and beneficial bacteria) and a very small amount of sea salt. Period. THAT is the recipe. We do NOT use flour in our pita. Not. One. Speck. We do not add yeast (we rely on wild yeast provided by nature). We do NOT add vital wheat gluten. We rely on natural leavens. We do NOT add dough enhancers NOR preservatives nor dough modifiers of any kind. Nothing. beyond sprouted organic wheat, filtered water and sea salt. This is it. This is the preeminent pita available anywhere. Our base customers are diabetics and those who claim gluten sensitivity. Is there gluten in this pita? Yes. Of course. We make our sprouted wheat dough with wheat*. But what our customers tell us that they do not have an adverse reaction to this bread or to the gluten it contains. Why? Sprouting and the process of fermentation impacts gluten development. That said, gluten is still evident in our dough. Can you eat this bread if you are gluten intolerant? That is an individual response. We can not guarantee that you will not have a reaction but if you have tried sprouted and or naturally leavened breads, you should find this pita entirely acceptable and absolutely delicious. *A recent lab analysis of our bread (same recipe for pita) for gluten content shows our dough tested at 81 parts per million.
