The Excalibur 8 inch stainless steel forged blade chef knife is stain resistant, keeps a long lasting durable sharp edge and is so razor sharp, when it comes from the factory that it can easily slice downwards through a dangling sheet of paper. The Excalibur is the only all stainless steel chef knife on the market today with a fully forged blade and a partially hollow single cast injection molded stainless steel handle. This unique computer modeled specification, a spin-off of the aerospace industry, is vital for proper balance. The Excalibur easily balances on the tip of an extended index finger. Prior to the appearance of the Excalibur, balancing an all steel handle against a metal blade was not easy. One option, still used today, employs sheet metal. Unfortunately, the volume of a sheet metal handle is too light weight to provide proper balance against the weight of the much thicker metal in the blade. Sometimes additional weight for this type of handle is provided by partially filling the hollow handle space with sand, but too much sand makes the handle too heavy for proper balancing. Unfortunately, this method provides balance only when the knife is precisely horizontal. Shifting sand inside the handle results in a loss of balance, when the knife is rotated. Also, this type of handle is susceptible to denting and bending through normal usage. A completely solid stainless steel handle also results in an imbalanced knife, because almost any solid handle will have decidedly more weight of steel than its blade. All surfaces of the Excalibur are provided with one uninterrupted satin finish. The Excalibur has no applied paint or chemical patinas. Grooves in the handle of the Excalibur provide a steady grip, so there is no worry about slipping even when the handle is wet with water or grease. The bolster, where the blade meets the handle, improves finger safety. By contrast many Asian kitchen knives have no bolsters.3.
